I’ve not posted a recipe for ages. I cook heaps and then often don’t think to take pics until after my efforts have been devoured!

This isn’t really a trifle as such, however I was stuck for a quick and easy dessert to make with what I had already made in the freezer/fridge and really don’t know what else to call it. Trifle seems close enough!

I had some strawberries that I wanted to use up together with trying to encourage my daughter to eat more fresh fruit.

I already had jello/jelly made and on hand and a batch of baked un-iced cupcakes in the freezer, made using the cake batter recipe for Wickedly Delicious No Added Sugar Rich Chocolate Cake.

Ingredients:
1 cupcake per person
Sugar Free Instant Chocolate Pudding (made according to pkt directions and allowed to chill)
Sugar Free Strawberry Jello/Jelly (made according to pkt directions and allowed to set)
Approx 1/2 Cup sliced strawberries per person (or other ripe berries of choice)

Method:
In the bottom of the dessert dish I added a layer of Instant Sugar Free Chocolate Pudding.
I then added a broken up cupcake in a layer.
Continued with another layer of chocolate pudding.
A layer of strawberry sugar free jello/jelly.
Then a layer of lovely fresh, ripe sliced strawberries.
More chocolate pudding and more strawberries.
Then into the fridge again for about an hour to allow it all to chill together.

*This could easily be done in a large single dish rather than individual dishes.

My daughter raved about this and thought it was just the bestest!
